Thai Curry made Easy


I've been making this in bulk & eating it non stop! I just can't get enough! I was introduced to this recipe over at a friend's for dinner. I'll be stopping there often from now on ;)

Curry

tbsp coconut oil

4 chicken breasts (can replace with 1 tin chickpeas)

2 tablespoons Peanut Butter

2 table spoons Sambal Oelek (any kind of Chilli works perfectly)

1 green pepper

1 red pepper

2 medium sweet potatoes

any other desired veggies

1 tin coconut milk

Rice

1 cup brown rice

1 tin coconut milk

1 cup water

top with a bunch of coriander
