C h o c F u d g e

Too often we reach for processed, sugar laden & additive filled snacks when that horrid late afternoon crash kicks in. Well I've tried, tested & found the cure! Would you believe me when I tell you that this simple, yet oh so decadent fudge, packs a nutritional punch! Best believe me, because it's true! Cacao & coconut oil.. Both health gems I'm sure you've heard about which ensure that this little square keeps you going till dinner. And you've had a treat!

I n g r e d i e n t s
½ cup melted coconut oil
1 stick of good quality (organic, grass-fed) butter
½ cup unsweetened cacao / cocoa powder
¼ cup rice syrup
1 teaspoon vanilla extract
a pinch of salt
3 tablespoons shredded coconut
2 tablespoon puffed brown rice (I get mine from Wellness Warehouse but can be substituted with coconut flakes, nuts, seeds or excluded)
~ Line a small square baking dish with baking / wax paper,
rub with a little bit of coconut oil or butter
~ Melt the coconut oil & butter in a pot on the stove and remove once melted
~ Add the cocao, rice syrup, vanilla extract, salt, 2 tablespoons shredded coconut and puffed brown rice mixing it into the coconut oil
~ Pour the mixture into the baking dish & sprinkle with remaining tablespoon coconut
~ Freeze until it sets (about 30 minutes)
~ Remove from the freezer & cut the fudge block into even squares
~ Store in the freezer in an airtight container
