Butter Chicken Curry

Winter cravings satisfied!

4 chicken breasts

1 cup greek yoghurt

1/2 cup cream

125g butter

1 tbs chilli paste

1/2 tsp coriander powder

1/2 tsp cumin

1tsp salt

1 tsp turmeric

3 garlic cloves

1/4 cup tomato paste

1 onion

1tbs shredded ginger

1 cup brown rice

~ allow the cup of rice to boil whilst making the curry

~ bring the rice to boiling in two cups water & then leave on low heat until water has simmered away & rice is cooked through

~ mix all the ingredients except the butter, cream, onion & garlic together (yoghurt, chilli, coriander, cumin, salt, turmeric, ginger & tomato paste)

~ cut the chicken into small cubes

~ chop the onion & fry the onion with the butter on medium heat until light brown

~ add the garlic & chicken & fry for a minute or two

~ add the mixture & fry until chicken is nearly cooked

~ add the cream and allow the curry to cook on low heat for another 5 to 10 minutes until chicken has cooked through
