Mixed Veggie Dhal Soup

The easiest, simplest, tastiest, healthiest meal you can get

350g mixed vegetables of choice (e.g. butternut, sweet potato, carrots, onion, mushrooms, celery, chickpeas)

1 cup mung dhal beans

1tbs ghee / coconut oil / olive oil

1tsp cumins seeds

1 tbs grater / finely chopped ginger

1/2 tsp cumin powder

1/2 tsp coriander powder

1 1/2 tsp turmeric powder

1tbs lemon juice

6 cups water

~ soak mung beans for a few hours beforehand & wash thoroughly

~ In a large pot, heat the ghee / oil over medium heat

~ add the cumin seeds and fry until they start to pop

~ add the vegetables, ginger & mung beans and stir gently for a few minutes

~ add the water & spices

~ simmer over low heat for 30 - 50 minutes until veggies & mung beans are soft

~ add lemon juice towards the end

~ serve up as a soup or add rice as a side
