GuiltFree Chocolate Chip Cookies

Low fructose (sugar) & Glutenfree
Did you ever think you could eat choc chip cookies guilt free?? Now you can :)
All the treats I make are high fat, low sugar. Good fats are GOOD for you!!

2 1/5 cups almond meal
(ground almonds including the skins which can be done in a nutribullet / food processor)
1/2 cup buckwheat flour
1/2 tsp baking soda
1/2 tsp salt
1 egg
1tbs liquid stevia / xylitol
1tsp vanilla extract
2tbs rice syrup
125g organic butter (melted & cooled)
1/2 cup chopped dark chocolate (e.g. 85% Lindt)
~ Preheat oven to 180°C (350°F) and line a baking tray with baking / wax paper
~ In a bowl, mix the almond meal, buckwheat flour, baking soda & salt together
~ In another bowl, whisk the melted butter, egg, liquid stevia / xylitol, vanilla, rice syrup until combined
~ add the liquid mixture to the dry mixture and combine until it makes a sticky dough
~ add the chopped dark chocolate into the mixture
~ spoon 1 tablespoon size per cookie onto the baking tray (place quite far from one another - they expand!)
~ cook for 12 - 15 minutes depending on how crispy you want them!
~ allow to cool and dive in!
